Homemade hummus, garlic prawns & hippy salads!


I posted this photo on Sunday from my instagram account and since lots of friends liked it & asked in particular what the salad was on the left I thought I'd share my recipe with you!

Homemade Hummus

Ingredients

1 x 400g tin of chickpeas (tip out half of the liquid in the tin keep the other half)
3 tablespoons of tahini
3 cloves of crushed garlic
Dash of sea salt
Dash of cumin powder
Squeeze of lemon

Put everything in a blender and blend until fairly smooth, but you still want some nice chickpea texture in there. Taste test and season again if needed.

Garlic Prawns

Ingredients

1/2 kg of local banana prawns
4 cloves of freshly crushed garlic
Organic nut butter

1. Take the shells off of the prawns, leave tails on & butterfly them.
2. Heat nut butter in a pan, add garlic then toss in the prawns!
3. Cook the prawns until they are white, not too much you don't want them to dry out
4. Enjoy! They taste great with the hummus too.

Happy Hippy salad

Ingredients

1 cup roasted cracked whole grain - precooked (you need to cook this like rice)
2 tablespoons of white quinoa (cook with the cracked wholegrain)
1 x 400g tin brown lentils, drained and washed
1 x 400g tin chickpeas, drained and washed
1 x 400g tin baby beetroots, cut in quarters
40g roasted pine nuts
Quarter of a Spanish onion thinly sliced
Handful of parsley, chopped

Combine all of the ingredients except for parsley in a large serving bowl, mix them together and top with the parsley! You can also squeeze a wedge of fresh lime over it for an extra punch of flavour.

Crunchy Garden salad

Ingredients

Rocket, spinach leaves and any other leafy greens you have in the fridge
Capsicum, sliced
Tomato, diced
1 x avocado, diced
Quarter of a Spanish onion thinly sliced
2 handfuls of crunchy snow peas
4 mushrooms, chopped

Rinse everything and then add to your salad spinner. I just bought a salad spinner similar to the image below from my local supermarket for only $10. They are totally worth it because it completely cleans, dries and fluffs up salads, plus you can store your salad in this in the fridge for a couple of days, keeping it crisp and fresh.

Serve these dishes all together and enjoy for lunch the next day! Super healthy and really tasty!
